                                Healthy & Fresh Lentil Salad Recipe 


       
            hey guys welcome back to my kitchen and today I'm so excited to share with you guys one of my output favorite salads that I like to make pretty much every other week it's like on rotation its base is lentils as you can tell from the title of the video and lots of healthy fresh ingredients so here is everything we're going to need and let's get started so here is all the ingredients that we need to make this delicious lentil salad so of course the base islentils and here I have these sprouted lentils which are the sprouting process helps to unlock the nutrients and also helps to cook the lentils faster and then a red bell pepper one whole English cucumber a bunch of delicious and aromatic cilantro and then I'm going todress the salad with olive oils and ajuice of one lemon and just some salt and that's it okay so the first thing I'm going to do is just start off bycooking the lentils so I'm going to measure out and one cup of lentils I'm going to add it to a medium sized pot and then to one cup of lentils it's 2 cups of water so it's basically the same as cooking rice so I'm going to add that in one and two I'm also going to add a little bit of fault so once the lentils are boiling I'm going to bring the heat down to low cover the pot let them cook until all the liquid absorbs and the lentils are nice and soft okay super easy all the veggies just need to be diced so the way I like to do it is I like to cut my cucumbers into manageable sizes and then I like I cut out the inside portion so I'll just pop them all out into easier sizes to dice and I leave the skin on because it has a lot of nutrients but what I'd like to do is remove this seedy part because it has a lot of moisture and water in it and if I've done it before in the salad it really releases a lot of water into the salad and I don't really like that so you can leave it in if you'd like but I prefer to just take out that seedy part so I like to kind of just score into it and cut it out just like that so we're going to go ahead and do that with all of these cucumbers once the CD centers are out I like to just start cutting it into strips ah you just bring it all together and start dicing into cubes just like so  okay now it's time for the bell pepper and the way I like to cut mind out or clean mine out before I start to dice it I like to just cut out the end portion just like that remove that CD portion and I try to get into it as much as I can without like disturbing the actual fees so remove that and then I like to cut it into the natural divider so sometimes it's three sometimes it's four so just like that cut into that and then I like to just go in and remove these white fish so I just kind of go around and remove those and then again cut it into the natural division we're going to remove the white part and then just shake out the key and again I don't like to have the seeds in a salad so I'll remove all of those coming aboard and then again remove all the white bits and as well okay so once I do that I cut out the curved edges or I just the top and only because I like to have like I'm crazy low protectionist so I like to have like straight pieces and these ones will just have for a snack later so the way I like to do this again same thing we're going to cut it into strips I like to keep it approximately the same sort of consistent side and then same thing we're just going to dice it just like so  you okay and lastly very very easy just going to chop up the cilantro so this is one bunch of cilantro the way I like to do it I just cut it in half about half then I bring the two halves together gather it all into a bunch tightly and then just start chopping not too small because the lemon juice will sort of wilt them so I like to keep them about like 1/2 inch or a quarter inch I guessin pieces and again I try to keep it consistent as for visual purposes but you don't have to do that this is kind of my own little cork unit so just like that chop it up and I love cilantro so I like to add a lot if you're not a fan of cilantro or you don't want this much then definitely just follow kind of your own preference and add as much or as little as you like we're just going to add that into people that well so I just added in the lentils olive oil and lemon juice and I think the camera was not recording so thank you so wasn't filming I just added an electrode the lemon juice and the olive oil just drizzled some olive oil right over we can add a little bit more actually and then the lentils were already cooked with salt so just paste it and then salted more if you need to just as far as your preference goes so very very simple and easy to make so once you mix it a little well it's pretty much ready to go it does taste better if you let it sit and marinate the longer it sits marinate the better it tastes I would say couple hours in the fridge is enough so they're you know how does this is how easy it is to make this
